So we rebuilt every sauce, every glaze and every recipe without alcohol or non-halal ingredients — and kept the flavour honest.
Our salmon is fresh Lerøy Norwegian salmon. Our rice is seasoned the traditional way. Nothing is pre-frozen sushi from a factory; everything is cut, pressed and assembled in our kitchen the day you eat it.
We are run, supplied and owned by Thai people. Eating with us supports local business.

Chef Ben has led kitchens across several countries and spent years cooking for Japanese ambassadors and their official residences — the standard where authenticity is not negotiable. He brought that standard here. We do not compromise on ingredients: no cheaper substitutes, no shortcuts, no factory sushi. Every bowl at Nori Nomad carries that experience, and a chef's insistence that halal never means second-best.
